I have to admit that I'm not very good at substituting veggies for my pasta. I love veggies and I love pasta, and I even love them together! However, I had a crazy week so I picked up a package of spiralized butternut squash in the market on Friday. I had grand plans for a new recipe but ended up heating some olive oil in a cast iron pan, tossing in the spiralized squash, tossed it around with tongs, added a touch more olive oil and some Healthy Solutions Spice Blends Shrimp Scampi. That's one of my favorite blends because of the great garlic taste. Here's what I ended up with and it was delicious. Try this and let me know what you think. I'd love to hear your variations on it.
